2023 Hot List: The Best New Restaurants in the World
Place des Fêtes — New York City
This famous wine bar provides a spot with a rare sweet and warm atmosphere. For date night, go to the bar with views
of the open kitchen, or fill up the large table in the back with a group and taste the entire 20-item menu. Either way, do not
miss the famous mushroom soup.
Le Doyenné — Saint-Vrain, France
Australian chefs James Henry and Shaun Kelly transformed the former stables ( ) of a 19th-century private estate
into a working farm, restaurant, and guesthouse driven by the principles of regenerative agriculture. More than one hundred
varieties of fruits, vegetables, and herbs make their way into Henry’s cooking after being carefully nurtured by Kelly.
Mi Compa Chava — Mexico City
Seafood is a hangover cure in Mexico, and almost everyone eating here is devoted to fixing last night’s damage from
drunkenness and getting a head start on creating today’s. On the sidewalk, crowds of locals and tourists alike line up for
fisherman Salvador Orozco’s creative takes on Sinaloa and Baja seafood. Anything from the raw half of the menu is a sure
bet, though cooked dishes like fish can help fill out a meal.
Vilas — Bangkok
Can a dish inspired by a Spanish recipe using Japanese ingredients still be considered Thai? For Chef Prin Polsuk, one
of Bangkok’s most famous Thai chefs, it most certainly can. At his latest restaurant, a small dining room at the base of
Bangkok’s landmark King Power Mahanakhon Tower, he draws inspiration from King Chulalongkorn’s 1897 journey

Born in Hungary, Katalin Kariko always wanted to be an outstanding scientist when she was young. Her love of
biology took her to the University of Szeged where she studied and then worked as a researcher at its Biological Research
Center. Unfortunately, in 1985, Dr Kariko’s university’s research program ran out of money, which cast a shadow on her
family. Kariko, her husband, and their 2-year-old daughter moved to America for her new job that could make her go on
with her research at university in Philadelphia, America.
Kariko has spent her whole life trying to figure out how to use a person’s own cells to cure and prevent illness. She
focused on mRNA, or messenger RNA, which could be used to instruct cells to make their own medicines, including
vaccines (疫苗). In the 1990’s, Kariko tried to get money from big companies to do her experiments. No one would do that
because her ideas and concepts of mRNA were too unbelievable at the time. “I thought maybe I’m not good enough, not
gifted enough. I tried to imagine: Everything is here, and I just have to do better experiments,” Kariko said.
Fortunately, a meeting at a university photocopying machine brought about a substantial change to her life. She met
another brilliant researcher, Dr Drew Weissman. She told him, “I am an mRNA scientist I can make anything with
mRNA.” Weissman told her he just wanted to make vaccines against HIV. Kariko said, “Yeah, yeah, I can do it.” After that,
they worked together for many years exploring the possibilities of mRNA, which led to the development of a vaccine for a
severe infection — COVID-19 (Corona Virus Disease 2019).
Finally, two biotech companies, Moderna, in America, and BioNTech, in Germany, took notice of their findings. The
two companies provided money to support Weissman’s lab.
